Don Jorge

Updated September 2025

Don Jorge “Tasca Fina”opened this past spring in Triana, a stone’s throw from the Plaza Altozano, in the space that once housed legendary Casa Manolo. It’s the first solo venture for Ximena Tarazona, who was previously with the Lima Sorda group. The space is light and fresh, lots of windows letting in natural light, with tall tables in front of the bar area and low tables to either side. The décor is a bit of a modernist mishmash, but nice to see the homage to Triana tiles. And there’s an ample sidewalk terrace.

The menu offers a combination of traditional dishes with a few fusiony twists thrown in here and there. We loved the croquetas de carabineros, perfectly crispy on the outside and creamy inside. The bacalao frito with confit tomato and salsa verde was intense and delicious. Really everything we’ve tried over a few visits now has been great. DO check the daily specials – the ceviche style scallops are to die for and we also loved the crispy chipirón taco. And according to my dessert-loving pal the deep dark chocolate cheesecake sent her to heaven. Top service and a very good wine list.
