Restaurante Manolo Mayo first opened its doors in Los Palacios (Sevilla) over fifty years ago . In 2021 they opened their first Sevilla location in Calle Reyes Católicos, offering dishes that defined their culinary journey over the decades. This month a new chapter begins as the Mayo family moves to new premises in the 5 Star GL Thompson Hotel in Plaza de la Concordia. As always their cuisine focuses on high-quality ingredients and tradition, with a few avant-garde touches. The menu features many of Manolo Mayo’s classic dishes and greatest hits, such as their famous rice dishes, the smoked chicken and cured fish “mille-feuille”, sturgeon piononos, and bacalao con tomate, without forgetting the kitchen’s star ingredient: the Los Palacios tomato.
The décor is stylish and inviting. At the front there is a marble horseshoe bar with a display case for cold dishes and, of course, those tomatoes. Comfortable semi-tall tables and chairs line the windows in the bar area, looking out onto the street and terrace. At the back you’ll find the dining area in front of an open kitchen and a striking glass-floored wine cellar. There is a lovely tree and plant-filled terrace facing the square and also an indoor patio space (the latter, shared with the hotel, is for drinks only).
I love that they have a tapas area in this location with a separate menu, though you can also order from the main menu. Of course we had to have the tomatoes with bonito, which is dressed at the table with your choice of two olive oils (one “spicy”, one mild), sherry vinegar, sea salt and oregano. The bacalao buñuelos are incredibly light and crispy, while the decadent “guarrito” pork belly bites are super rich (but worth it), and the aforementioned chicken & cured fish “mille-feuille”, served on top of thinly sliced tomatoes, is an explosion of flavours. I’ve only tried the tapas menu so far, but I am familiar with the restaurant from visits to their previous spot. Excellent service and a good selection of both regional and national wines with lots by-the-glass options. Recommended!
