A welcome addition to the centre of Sevilla since opening in the spring of 2019, La Cayetana Bistó Andalú takes us back to simpler times (and menus). The bar is cosy, with comfy low tables in the main dining area and a few more seats in front of the bar. Owner and chef Luis Valpuesta has elevated Andalusian classics with close attention to quality and presentation. I’ve known Luis since he started with Petit Comité many years ago, and so I knew the first time I visited that the service would be impeccable. There seems to be a bit of a trend away from the whole “gastrobar” scene, with new places embracing the traditional but then taking things up a few notches without losing the integrity of the dishes. It’s a trend I welcome wholeheartedly.
The menu is basically divided into cold dishes, hot dishes (including fab fritos) and a selection of top notch charcuterie and conserves. The “matrimonio” here is my favourite in the city, a boquerón and anchoa with alboronia and light alioli on toasted tramezzini is next level deliciousness. Also try their famous made-to-order tortilla de patatas, and the whole fried squid. Check the daily specials and if they happen to have boquerones al limón, do not hesitate. So crispy light and flavourful. And save room for dessert – the cheese cake is excellent. There’s a very good wine list with plenty of options by the glass. Reservations recommended.
