El Traga

A stone’s throw from the Plaza Alfalfa, El Traga has been a welcome addition to the barrio since opening in late 2015. After years of running the kitchens at La Azotea, chef Jesús Rosendo has realised a personal dream along with co-owners (and brothers) Manuel & Pedro Adame. The original Taberna El Traga, owned and run by Jesús’s father, was one of Sevilla’s most emblematic taverns, and there is a large mural of the old bar at the back of its young namesake. Which couldn’t be more different in appearance. Modern and bright, done out in warm wood and stone tones, and with a fabulous “open” kitchen (actually enclosed in glass) with colourful mismatched tiles on the walls. It also has nontraditional opening hours: seven days a week, from 1pm to midnight (though the kitchen closes between 4-8pm).

Likewise the food at El Traga strays from the traditional (a Rosendo trademark) with an emphasis on high quality products, including lots of fresh local ingredients. Tapas prices range from 3.50€ to a whopping 6.80€, but portions are generous and the quality is there. Larger plates are also available. Service is top-notch, professional and friendly, with knowledgeable staff. The Adame brothers have done an excellent job with front of house, and one of them is usually there to welcome you.

We loved the crispy fried boquerones with basil and lemon zest, and the calamar semi-tartare was stunning. Less successful were the steamed “club sandwich” (too much going on and mostly tasting of egg) and the burger (I should know better) but I will go back again and again for the fabulous presa Ibérica done two ways: grilled and sous vide.  Since opening there have been some great additions to the menu, including duck confit croquetas and a laquered slow-cooked beef shank.
